This simple cucumber tomato salad is one of my favorites because it’s the perfect summer salad. Choosing the best tomatoes, cucumbers, and onions from the grocery store or farmer’s market is super important for this refreshing salad, but it’s so easy to make and sure to be a crowd-pleaser. I love bringing this to barbecues or serving it for dinner or lunch. It can be used as a side dish or light meal. With a simple dressing, this tomato-cucumber salad is one you want to enjoy on repeat at this time of year. Let’s take a look at the ingredients.

  • Tomatoes.
  • Cucumbers.
  • Red Onion.
  • Apple Cider Vinegar.
  • Extra Virgin Olive Oil.
  • Salt.
  • Pepper.

1. Cut the cucumbers, tomatoes, and onions very thinly and place into a medium mixing bowl.

2. To the bowl with vegetables add vinegar, olive oil, salt, and pepper. Mix well and serve.

  • Cut the veggies thinly. You want thin slivers of vegetables so that there is no one overpowering the others in a bite. 
  • Mix well. Make sure to get full coverage on the vegetables with the dressing and spices. 
  • Serve immediately. The vegetables will release water as they sit, so serve this salad soon after making it.
  • Add feta cheese. This simple salad tastes amazing with crumbles of feta cheese, which adds a salty, briny flavor to this refreshing dish.
  • Substitute another acid. Use red wine vinegar, balsamic vinegar, lemon juice, rice vinegar, white wine vinegar, or a simple vinaigrette.
