Healthy No-Bake Brownies (Vegan/Dairy-free/GF)

These healthy no-bake brownies are a must-try. You only need a handful of easy to find ingredients and there’s no baking required. They’re also a great source of fibre (from the oats), healthy fats (from the tahini) and antioxidants (from the cocoa/dark chocolate). They taste decadent whilst being good for you – that’s the kind of dessert I want more of in my life!

One of my most popular recipes on my blog are these no-bake chocolate covered brownies. I get why they’re so loved – they’re easy, tasty and fool-proof, so anyone can make them. They’re also just as decadent and satisfying as a regular brownie (I think so anyway!), but made with healthier ingredients like dates, tahini, cocoa powder and dark chocolate. All actually good for you and packed with antioxidants. 

I wanted to make something similar, but even easier. These healthy no-bake brownies are date-free (good quality soft dates aren’t the cheapest ingredient or the easiest to find), and you don’t need a food processor to make them. All you need is a bowl, a spoon and a few basic ingredients that you probably already have in your kitchen cupboard!

I also had a batch of homemade tahini I had recently made that I wanted to use in a recipe. If you’ve been following me for a while you know how much I love tahini + chocolate. The flavours go so well together, especially in brownie form.

Healthy No-Bake Brownies

Why I love making these healthy no-bake brownies:

I love no-bake desserts in general. They require minimal preparation and can be made quickly. They’re also mush easier to get right since you can taste test and adjust as you go along instead of waiting for them to bake to know whether they’re a success.

No-bake desserts like these healthy no-bake brownies are also easier to healthify. You can pack them with oats, heart healthy nuts/nut butters and seeds. You don’t need things like plain flour or oil to make them taste good/give them the right texture. Without the need for baking, no-bake desserts often have a dense, moist texture that many people (myself included) find irresistible. 

I love making these healthy no-bake brownies. They always hit the spot when I’m craving something sweet and chocolatey. They’re not too heavy, so they don’t leave me feeling uncomfortable and lethargic like a regular brownie would. I often make a batch to have in the fridge for when I want to end my meal with something sweet. 

You can make them with or without dark chocolate. They do taste amazing without, so if you’re looking for a lower calorie option, you can skip the dark chocolate coating. I do think they taste so much more satisfying with the dark chocolate. Depending on how I’m feeling on the day, I either dip them in chocolate, so there’s a hint of decadence, but not too much. When I’m in the need for something extra special, I cover them entirely in dark chocolate. I just love biting into that crunchy shell – it’s so satisfying!

Healthy No-Bake Brownies

What you’ll need to make these healthy no-bake brownies:

Oats – A great ingredient to use as a base for no-bake desserts. I make my own oat flour by blending oats into a fine flour in a high-speed blender. Make sure to use gluten-free oats if you need this recipe to be gluten-free.

Cocoa powder – I use quite a bit, and this is what makes these brownies super rich and decadent. Cocoa powder is packed with antioxidants, so a great ingredient to add to healthier desserts. 

Tahini – This acts as a binder, but also adds a lovely nutty flavour as well as helps make these brownies super moist. I use runny tahini to get the best texture. I would recommend using Middle Eastern/Lebanese tahini. I get mine online or from local ethnic shops. You can also make your own runny tahini at home, check out my homemade tahini recipe here.

Coconut oil – I only use 2 tbsp of coconut oil to add a little extra moisture and to help everything mix well together. You can also use melted butter/dairy-free butter alternative. 

Maple syrup – You need some sweetness to cut through the bitter chocolate. Also, you can’t make brownies without some kind of sweetener. Other liquid sweeteners will also work here like honey, agave, rice syrup, etc.

Dark chocolate – This is optional, but I would recommend dipping your brownies in dark chocolate for extra decadent. You can also drizzle a little more chocolate on top or you can cover them with chocolate. It all depends on your preference. 

How to make these healthy no-bake brownies:

  • Mix the oat flour, cocoa and a pinch of salt in a bowl.

  • Pour in the tahini, maple syrup and coconut oil. Mix until you have a well combined dough.

  • Press into square silicon moulds, brownie moulds or a 8″ square cake tin lined with baking paper.

  • Freeze for 30-60 minutes, then remove from the moulds or slice into 12 squares if using a cake tin.

  • You have the option to dip them in melted chocolate for extra decadence and drizzle a little more chocolate on top. Or you can coat them in chocolate.

How to store your healthy no-bake brownies:

Store in an air-tight container in the fridge for up to 5 days.

  • 120g oat flour*
  • 80g cocoa powder
  • Pinch of salt
  • 160g runny tahini**
  • 7 tbsp maple syrup
  • 2 tbsp coconut oil

Optional addition

  • 100 g dark chocolate for dipping/coating

Instructions 

  • Mix the oat flour, cocoa and a pinch of salt in a bowl.

  • Pour in the tahini, maple syrup and coconut oil. Mix until you have a well combined dough.

  • Press into square silicon moulds, brownie moulds or a 8″ square cake tin lined with baking paper.
